Renowned Australian chef Luke Mangan is the owner of decorated restaurants such as Glass in Sydney, Salt in Tokyo and Salt Grill in Singapore.
The latest addition to the ‘Salt’ brand is Salt Tapas and Bar (252 North Bridge Road, Raffles City, Singapore; 6837-0995; salttapas.com), it’s a more laid back venue than Mangan’s other eateries, offering guests a modern Spanish vibe and a comfortable semi-alfresco setting which is a perfect match for his elegant take on tapas.
Among the many standout dishes are the bone marrow with shitake duxelle and the fried oysters coated in a chickpea batter. A good tapas joint needs to have excellent drinks, but rest assured Mangan has got you covered. Once you try his delicious take on sangria, featuring a base of brandy, cointreau and Australian red, you’ll be ordering it by the jug.
