Infusing classic French cuisine with Asian herbs and spices, chef Jerome’s most delightful dishes include the green asparagus royal and truffle emulsion; the seared black cod, vegetables tart, snow peas sauce; and the caramelized apple mille-feuille. Yet there’s so much more to discover, as the chef isn’t afraid to explore the freshest local ingredients and take in some heat to spice up the flavors.
