At first glance, the seemingly contradictory palates, if not handled with the utmost care, could result in a catastrophic clashing of flavors. Yet, with chef de cuisine Shane Lynch’s meticulously orchestrated menu, the result of the amalgamation is a harmonious balance of flavors. With a strong focus on seafood, the exotic twists in classic fares result in dishes such as the pan-seared sea bass topped with tapioca pearls, Shoyu beef bordelaise and Hibachi king oyster mushrooms.
